Resumen
El presente proyecto se enfoca en la deficiencia proteica en la dieta peruana y su
impacto en la salud pública. Con este trabajo de investigación buscamos presentar una
solución a la problemática alimenticia actual. Se destaca la importancia de la proteína en la
nutrición humana y cómo su falta puede llevar a una serie de problemas de salud, como la
anemia y la obesidad. Así mismo, Se reconoce que la dieta tradicional peruana, aunque rica
en carbohidratos, carece en gran medida de fuentes adecuadas de proteínas (Pulido, 2023). En
este contexto, se propone la introducción de una barra de proteína al mercado peruano como
una solución potencial para ayudar a abordar esta deficiencia. La barra de proteína se presenta
como una opción conveniente y accesible para aumentar la ingesta de proteínas en la dieta
diaria, lo que puede contribuir significativamente a mejorar la salud y el bienestar de la
población peruana.
Esta iniciativa contribuye directamente a varios Objetivos de Desarrollo Sostenible de
las Naciones Unidas. Al abordar la deficiencia proteica en la dieta peruana, se trabaja hacia el
ODS 2 (Hambre Cero) y se promueve una alimentación saludable para todos. También se
promueve el ODS 12 (Producción y Consumo Responsables) al fomentar el reciclaje de
empaques y promover el consumo consciente.
El proyecto demuestra su viabilidad económica con un VAN Económico de S/
4,511,013.14 y una TIR Económica del 112%, además de destacar su sostenibilidad social
con un VAN Social de S/ 3,731,772.45 y un Índice de Relevancia Social (IRS) global del
38.75%.
This project focuses on the protein deficiency in the Peruvian diet and its impact on public health. With this research work, we aim to present a solution to the current nutritional issue. The importance of protein in human nutrition is emphasized, and how its lack can lead to a range of health problems, such as anemia and obesity. It is recognized that the traditional Peruvian diet, although rich in carbohydrates, largely lacks adequate sources of proteins. In this context, the introduction of a protein bar to the Peruvian market is proposed as a potential solution to address this deficiency. The protein bar is presented as a convenient and accessible option to increase protein intake in daily diet, which can significantly contribute to improving the health and well-being of the Peruvian population. This initiative directly contributes to several United Nations Sustainable Development Goals (SDGs). By addressing protein deficiency in the Peruvian diet, we work towards SDG 2 (Zero Hunger) and promote healthy eating for all. Finally, SDG 12 (Responsible Consumption and Production) is also promoted by encouraging packaging recycling and promoting conscious consumption. The project demonstrates its economic viability with an Economic NPV of S/ 4,511,013.14 and an Economic IRR of 112%. It also highlights its social sustainability with a Social NPV of S/ 3,731,772.45 and a global Social Relevance Index (SRI) of 38.75%.
