Modelo prolab: La Hamburguesa Saludable – propuesta para la comercialización de alimentos saludables

Abstract
Una alimentación deficiente causa enfermedades cardiovasculares, sobrepeso,
obesidad, diabetes, cánceres y otros problemas de salud. Por eso existe la preocupación y
tendencia global de búsqueda de alimentación más saludable (Gonzales, 2020). En Lima
Metropolitana, zonas de conglomerados empresariales o centros de formación, incrementaron
su demanda por comidas rápidas (Cámara Peruana de Comercio Electrónico, 2021);
impulsado por el segmento de profesionales mayoritariamente jóvenes, que se caracterizan
por su estilo de vida agitado y práctico que los motivó a adaptar sus hábitos para alimentarse,
principalmente por el tiempo disponible, optimizar gastos y comer rico; sin embargo,
mantienen su predisposición a conseguir comida más sana y cuidar su salud; lo que
actualmente se limita por el acceso a ofertas disponibles en su entorno.
Esta situación se determinó con el análisis del mercado y recolección de datos que
permitieron identificar los principales patrones de comportamiento y perfil de los usuarios.
La solución planteada es comercializar comida rápida, saludable y con fácil acceso, mediante
el emprendimiento “La Hamburguesa Saludable”. El producto se basa en hamburguesas
vegetarianas, con sabor agradable y presentación tipo producto fast food. Para su producción
se usarán dark kitchens y el reparto mediante opciones delivery y recojo en local.
El principal objetivo de la solución propuesta es mejorar la calidad de vida de las
personas a través de la oferta de una opción saludable, práctica y sencilla, que se adapta a
necesidades de los usuarios, para esto se evaluó el modelo de negocio y validó las hipótesis
de deseabilidad del producto por parte de los usuarios; la factibilidad, considerando
proyecciones de ventas, costos y gastos asociados a la puesta en marcha del proyecto.
Finalmente, la viabilidad financiera se confirmó al obtener una TIR de 215% y una TIR
Modificada de 78%, bajo un escenario base esperado.

In Metropolitan Lima, areas of business conglomerates or training centers increased their demand for fast food (Cámara Peruana de Comercio Electrónico, 2021); driven by the segment of mostly young professionals, who are characterized by their hectic and practical lifestyle that motivated them to adapt their eating habits, mainly by optimizing the time available, spending and eating well. However, maintain your predisposition to get healthier food and take care of your health; which is currently limited by access to offers available in your environment. This situation will be developed with market analysis and data collection that will allow identifying the main behavior patterns and user profiles. The proposed solution is to market fast, healthy and easily accessible food, through the "La Hamburguesa Saludable" venture. The product is based on vegetarian burgers, it seeks to maintain the pleasant taste and presentation of the most consumed fast food product by Peruvians, after grilled chicken. The commercialization is adapted to the trends of the new normality, and for easy access and optimal implementation, dark kitchens and distribution will be used through local delivery and pick-up options. The main objective of the proposed solution is to improve the quality of life of people through the offer of a healthy, practical and simple option, which adapts to the needs of users, for this the business model is evaluated and validated. the hypotheses of desire of the product by the users; the feasibility, considering projections of sales, costs and expenses associated with the start-up of the project. Finally, the financial viability was confirmed by obtaining an TIR of 215% and a Modified TIR of 78%, under an expected scenario.
