Resumen
El propósito principal de esta investigación fue examinar y aplicar alternativas de
mejora en el desarrollo del proceso de elaboración de carcasas de cerdo en un centro de
beneficio animal, empleando herramientas de mejora continua e ingeniería industrial. Para ello,
se aplicaron metodologías como el ciclo PHVA, 5S, estandarización de procesos, TPM y
rediseño de ingeniería mediante la incorporación de una noria automatizada en la línea de
producción. Se trató de un estudio de carácter aplicado, con un enfoque cuantitativo y diseño
preexperimental. Como resultados, se logró una reducción del Tiempo Total del Proceso en un
61.5%, el aumento del porcentaje de valor agregado del proceso de 32.2% a 55.8%, y una
mejora del OEE de 38.4% a 64.9%. La instalación de la noria permite reducir el personal
requerido, aumentar la productividad en más de 30 animales por hora y mejorar la seguridad
ocupacional en la etapa de oreo. Desde el punto de vista económico, se determinó un Costo de
Oportunidad de Capital (COK) de 11.15%, obteniendo un Valor Actual Neto (VAN) de S/
1,070,577.61 y una Tasa Interna de Retorno (TIR) de 49%, validando la rentabilidad del
proyecto. En conclusión, la implementación de herramientas Lean y de ingeniería permitió
transformar un esquema tradicional en uno eficiente, rentable y alineado con los estándares de
calidad y sostenibilidad del sector cárnico.
The main purpose of this research was to examine and apply improvement alternatives to the pork carcass production process at an animal processing center, using continuous improvement tools and industrial engineering. To this end, methodologies such as the PDCA cycle, 5S, process standardization, TPM, and engineering redesign were applied through the incorporation of an automated waterwheel into the production line. This was an applied study with a quantitative approach and pre-experimental design. The results included a 61.5% reduction in Total Process Time (TPT), an increase in the process value-added percentage from 32.2% to 55.8%, and an improvement in OEE from 38.4% to 64.9%. The installation of the waterwheel reduced the required personnel, increased productivity by more than 30 animals per hour, and improved occupational safety during the aeration stage. From an economic perspective, an Opportunity Cost of Capital (OCC) of 11.15% was determined, resulting in a Net Present Value (NPV) of S/ 1,070,577.61 and an Internal Rate of Return (IRR) of 49%, validating the project's profitability. In conclusion, the implementation of Lean and engineering tools allowed the transformation of a traditional project into one that is efficient, profitable, and aligned with the quality and sustainability standards of the meat industry.
