Abstract
El presente modelo de negocio surge como una solución al problema social identificado:
la falta de higiene en la manipulación y preparación de alimentos en módulo ambulantes, además
de su alto contenido de azúcares y grasas saturadas, en Lima Metropolitana.
Se identificó que el consumo de alimentos en módulos ambulantes es habitual entre
personas de 18 a 65 años de los NSE B y C, debido a la falta de tiempo para preparar alimentos
en casa.
Aunque el consumo de alimentos en la vía pública tiene ventajas como precios accesibles
y diversidad, también plantea riesgos significativos para la salud pública. En Lima, el 42% de la
población come fuera de casa al menos una vez por semana, lo que representa una oportunidad
de negocio para propuestas que ofrezcan alimentos seguros y nutritivos.
En ese sentido, se presenta la propuesta de negocio "Andén" que busca posicionarse
como una cadena de locales que ofrece una experiencia integral al cliente, combinando
elementos de confort y seguridad con la venta de alimentos nutritivos y saludables, preparados
con insumos peruanos de alto contenido nutricional, y servidos en pocos minutos, sin
comprometer la calidad ni los estrictos protocolos de saneamiento. Su objetivo es satisfacer las
necesidades de quienes desean una alimentación rápida y de calidad, con altos estándares de
higiene y precios accesibles.
Finalmente, se valida la viabilidad financiera de la propuesta con un VAN financiero de
S/ 5,922,462 y una TIR de 68%; asimismo, un VAN social de S/ 5,610,729; lo que demuestra
que “Andén” es una solución viable, también se validan las hipótesis de deseabilidad a través de
experimentación.
This business model emerges as a solution to the identified social problem: the lack of hygiene in the handling and preparation of food in street food vendors, in addition to its high content of sugars and saturated fats, in Metropolitan Lima.. It was identified that the consumption of food in street food vendors is common among people aged 18 to 65 years of the B and C NSE, due to the lack of time to prepare food at home. Although the consumption of food in public spaces has advantages such as affordable prices and diversity, it also poses significant risks to public health. In Lima, 42% of the population leaves home at least once a week, which represents a business opportunity for proposals that will offer safe and nutritious food. In this sense, the "Anden" business proposal is presented, which seeks to position itself as a chain of stores that offers a comprehensive customer experience, combining elements of comfort and safety with the sale of nutritious and healthy food, prepared with high-quality Peruvian ingredients, nutritional content, and served in just a few minutes, without compromising quality or strict sanitation protocols. Its objective is to satisfy the needs of those who want fast, quality food, with high hygiene standards and affordable prices. Finally, the financial viability of the proposal is validated with a financial NPV of S/ 5,922,462 and an IRR of 68%; also, a social NPV of S/ 5,610,729; which shows that “Anden” is a viable solution, and the desirability hypotheses are also validated through experimentation.
