Resumen
Los comedores populares de Villa El Salvador enfrentan limitaciones económicas para
gestionar y ofrecer un servicio de calidad, al tener ingresos insuficientes que no permiten
adquirir en su totalidad los insumos básicos necesarios, así como para mantener una
infraestructura adecuada. La solución consiste en crear una cocina oculta, que brinde almuerzos
y/o desayunos a los oficinistas de empresas privadas, que piden por aplicativo y reciben por
delivery; y además ofrecer el servicio de almuerzos y/o desayunos corporativos de manera
regular y con entrega por delivery, en San Isidro y Miraflores. Siendo lo diferenciador dar
empleo a las encargadas de los comedores populares como ayudantes de cocina, y la donación
a los comedores populares de Villa El Salvador de un 10% de la utilidad neta.
Definido el problema se efectuó una investigación del usuario, luego se obtuvieron dos
soluciones, una para cada tipo de usuario. De estas últimas se halla una sola que combine las
dos anteriores. Después se elaboraron tres prototipos hasta llegar a una solución aceptable,
utilizando encuestas para ir validando la aceptación.
Se concluye que los clientes objetivo pueden pedir de 1 a 5 veces por semana un
almuerzo y/o desayuno que se encuentre dentro de su presupuesto, sabiendo que así apoyan un
negocio con impacto social, y además lo pueden realizar con facilidad utilizando el
aplicativo/web de Sazón Solidaria. Así mismo se concluye que durante los primeros cinco años
el plan de marketing generará más ingresos que pérdidas; para el quinto año se logrará el valor
esperado, es decir un VAN Económico mayor de un millón de dólares (1,111,002 dólares); la
magnitud del impacto de la solución en los Objetivos de Desarrollo Sostenible (ODS 2, ODS 5
y ODS 8) por medio de los Índices de Responsabilidad Social (IRS) indica que tiene
Relevancia Social; tiene Rentabilidad Social, porque genera un VAN Social mayor de 800 mil
dólares (2,024,349 dólares). Considerando todo lo indicado, es posible tener como conclusión
que se debe implementar la cocina oculta Sazón Solidaria.
The soup kitchens of Villa El Salvador face financial constraints in managing and providing quality service, as their income is insufficient to fully purchase the necessary basic supplies, nor to maintain adequate infrastructure. The solution consists of creating a hidden kitchen, providing lunch and/or breakfast to office workers of private companies, who order through an app and receive delivery; and also offering regular corporate lunch and/or breakfast services, with delivery, in San Isidro and Miraflores. The differentiating factor is employing the soup kitchen managers as kitchen assistants, and donating 10% of net profits to the soup kitchens of Villa El Salvador. Once the problem was defined, user research was conducted, and then two solutions were obtained, one for each type of user. Of these solutions, only one was found that combined the two previous solutions. Three prototypes were then developed until an acceptable solution was reached, using surveys to validate acceptance. It is concluded that target customers can order lunch and/or breakfast one to five times a week within their budget, knowing that this supports a business with a social impact. They can also do so easily using the Sazón Solidaria application/website. It is also concluded that during the first five years, the marketing plan will generate more revenue than losses; by the fifth year, the expected value will be achieved, that is, an Economic NPV greater than one million dollars (US$1,111,002). The magnitude of the solution's impact on the Sustainable Development Goals (SDG 2, SDG 5, and SDG 8) through the Social Responsibility Indices (SRI) indicates that it has Social Relevance; it has Social Profitability because it generates a Social NPV greater than 800 thousand dollars (US$2,024,349). Considering all the above, it is possible to conclude that the Sazón Solidaria hidden kitchen should be implemented.
