Modelo Prolab: “Healthy Food: Solución digital para combatir la malnutrición y mejorar la salud y bienestar de las personas en Lima Metropolitana y Callao”

Abstract
El proyecto Healthy Food surge para abordar el preocupante aumento de la obesidad y
enfermedades en Lima y Callao, destacando la falta de conciencia sobre hábitos alimenticios
saludables. Esta realidad refleja una población afectada por problemas de salud derivados de
una dieta inadecuada, dada las opciones alimenticias saludables y accesibles. A través de un
análisis exhaustivo del mercado, se identifica un público potencial en Lima metropolitana y
se analiza la dinámica competitiva en la industria de restaurantes que ofrecen comida
saludable.
Se diseñó una solución para ofrecer comidas saludables y personalizadas, priorizando
la comodidad y variedad nutricional, según los puntos críticos detectados en el perfil del
usuario y su experiencia. La validación de las hipótesis y del modelo de negocio se realizó
mediante encuestas que confirmaron la deseabilidad, factibilidad y viabilidad del proyecto.
Asimismo, se realizaron experimentos, estrategias de mercadeo, planes operativos y
evaluaciones financieras que demostraron la atracción del producto en el mercado y dieron
como resultado proyecciones financieras positivas con un VAN de S/ 2’509,572 y una TIR
Modificada del 139.99%.
Se destaca la contribución a los Objetivos de Desarrollo Sostenible (ODS)
especialmente en salud y en empleo, con lo cual se evidencia su relevancia social. El Valor
Actual Neto Social (VANS) calculado mostró un impacto positivo en la sociedad,
consolidando así el enfoque sostenible del proyecto, logrando reducir el desplazamiento de
las personas a los establecimientos de comida, contribuyendo con la disminución de las
emisiones de CO2 y beneficiando a la salud pública como el medio ambiente.
The Healthy Food project arises to address the worrying increase in obesity and associated diseases in Lima and Callao, highlighting the lack of awareness about healthy eating habits. This reality reflects a population affected by health problems derived from an inadequate diet, underscoring the urgency of healthy and accessible food options. Through an exhaustive analysis of the market, a potential audience is identified in metropolitan Lima and an analysis is made of how the competitive dynamics works in the restaurant industry that offers healthy food.In this sense, a solution application was designed to request offering healthy and personalized meals, prioritizing comfort and nutritional variety, according to the critical points detected in the user's profile and their experience. The validation of the hypotheses and the business model was carried out through surveys that confirmed the desirability, feasibility and viability of the project. Likewise, experiments, marketing strategies, operational plans and financial evaluations were carried out that demonstrated the attractiveness of the product in the market and resulted in positive financial projections. an NPV of S/ 2’509,572 and a Modified IRR of 139.9%. On the other hand, the contribution to the Sustainable Development Goals (SDGs ) stands out, especially in health and employment; Therefore, its social relevance is evident. On the other hand, the calculated Social Net Present Value (SVA) showed a positive impact on society, thus consolidating the sustainable approach of the project, managing to reduce the displacement of people to food establishments, contributing significantly to the reduction of CO2 emissions and benefiting public health and the environment. In this sense, the Healthy Food project stands out for its social impact by providing nutritious food options, promoting healthier habits and contributing to the prevention and control of diseases associated with diet. Additionally, by eliminating the need to travel to fast food establishments, the project can significantly reduce CO2 emissions, benefiting both public health and the environment.
