Modelo ProLab: Battishuro, una alternativa de alimentación saludable y nutritiva para la lucha contra la anemia

Abstract
La problemática que se aborda en este proyecto de investigación esta referido a la anemia
infantil, sus causas y consecuencias para la sociedad peruana, se ha identificado que el
principal causante de la anemia es el bajo nivel de hierro en la sangre reflejado en niveles
bajos de hemoglobina; esto debido sobre todo a la baja ingesta de alimentos con contenido de
hierro. Así mismo, en el mercado tampoco existen muchas alternativas para la adquisición de
alimentos enriquecidos con hierro, y de las que existen, por lo general no son del agrado de
los niños o niñas. En nuestro país, la anemia afecta al 34% de niños (as) cuyas edades esta
entre 6 meses y 5 años de edad; y el costo asociado a la anemia es de 0.74% del PBI, que
equivale a 6,600 millones de soles.
La propuesta de solución planteada es un producto alimenticio denominado
Battishuro, que consiste en toppings de Cushuro deshidratado cubiertos de chocolate como
componente principal, acompañado de un batido de yogurt que viene a ser un complemento
secundario; el valor agregado y diferenciador del Battishuro es precisamente su contenido de
Cushuro, que es un insumo natural (alga altoandina) con alto contenido de hierro, calcio y
proteínas. Con las entrevistas realizadas determinamos que el sabor preferido de los niños
para el complemento de los toppings, es decir el yogurt, es fresa y vainilla. El objetivo de la
alternativa de solución planteada es contribuir con una alimentación natural y nutritiva a
través del consumo de un producto rico en hierro que más que curar la anemia, ayude sobre
todo a prevenirla.
Los análisis realizados nos indican que el proyecto propuesto es deseable socialmente,
factible técnicamente y viable económicamente; la viabilidad se valida con el VAN obtenido
para cinco años de 2,018,956 de soles y una TIR de 103.27%. Así mismo, el proyecto
también es viable socialmente al obtener un VAN Social de 3,736,887 millones de soles.
The problem addressed in this research project refers to childhood anemia, its causes and consequences for Peruvian society. It has been identified that the main cause of anemia is the low level of iron in the blood reflected in low hemoglobin levels, this is mainly due to the low intake of iron-containing foods. Likewise, there are not many alternatives in the market for the acquisition of iron-enriched foods, and those that do exist are generally not to the liking of children. In our country, anemia affects 34% of children between 6 months and 5 years of age; and the cost associated with anemia is 0.74% of the GDP, equivalent to 6,600 million soles. The proposed solution is a food product called Battishuro, which consists in dehydrated Cushuro toppings covered with chocolate as the main component, accompanied by a yogurt shake that is a secondary complement; the added and differentiating value of Battishuro is its Cushuro content, which is a natural input (high Andean algae) with high iron, calcium, and protein content. With the interviews carried out, we determined that children's preferred flavor of toppings complement, that is, yogurt, is strawberry and vanilla. The objective of the proposed solution alternative is to contribute to a natural and nutritious diet through the consumption of a product rich in iron that, more than curing anemia, helps, above all, to prevent it. The analyzes carried out indicate that the proposed project is socially desirable, technically feasible and economically viable; The viability is validated with the NPV obtained for five years of 2,018,956 soles and an IRR of 103.27%. Likewise, the project is also socially viable by obtaining a Social NPV of 3.7 million soles.
