Resumen
En Trujillo y norte del Perú, se encontró una problemática, la que consiste en que
muchos niños de entre uno a seis años no reciben una alimentación adecuada, generando
cuadros de desnutrición, así como retraso en el crecimiento físico. Algunos factores que
influyen en esta problemática son: pobreza, falta de acceso a alimentos nutritivos, e incluso la
baja educación en temas de nutrición, lo cual afecta negativamente al desarrollo físicocognitivo de los menores. Frente a ello, existen múltiples soluciones para combatir esta
problemática, una de ellas es la del desarrollo de un suplemento nutricional para niños la cual
en la presente tesis se formuló uno a base de suero de leche en polvo que contiene proteína y
calcio, que ayuda al crecimiento del menor, panela en polvo rica en vitamina y minerales que
ayudan a la salud del menor y cascara de cacao en polvo que contiene antioxidantes y mejora
el sabor del producto.
Para determinar las características del producto se realizó entrevistas a los padres y/o
apoderados de los menores, así como a los mismos niños de quienes se obtuvo información
relevante como opiniones acerca del sabor, facilidad en la preparación del alimento para su
consumo, impacto esperado en la mejora física y cognitiva de los menores, entre otros. La
formulación del suplemento nutricional fue realizada con el respaldo de un estudio químico,
así como de un especialista en nutrición, para que el suplemento cumpla con las exigencias
del mercado así como de los gustos y preferencias de los menores. En el desarrollo de la tesis
se obtuvo un retorno actual neto (VAN) de 2´641,365.29 soles y una tasa interna de retorno
(TIR) de 76.49% demostrado que es una propuesta viable y sostenible ante la problemática de
desnutrición en niños de uno a seis años.
In Trujillo and northern Peru, a significant issue has been identified: many children from 1 to 6 years old do not receive adequate nutrition, leading to cases of malnutrition and stunted physical growth. Several factors contribute to this problem, including poverty, lack of access to nutritious foods, and low education regarding nutrition, all of which negatively affect the physical and cognitive development of these children. In response to this issue, there are multiple solutions to combat it; one such solution is the development of a nutritional supplement for children. This thesis formulates a supplement based on powdered whey that contains protein and calcium, which supports the child's growth, panela rich in vitamins and minerals that promote the child's health, and powdered cocoa shell that contains antioxidants and enhances the product's flavor. To determine the product's characteristics, interviews were conducted with parents and guardians of the children, as well as with the children themselves, from whom relevant information was gathered, such as opinions on taste, ease of preparation of the food, and the expected impact on the children's physical and cognitive improvement, among others. The formulation of the nutritional supplement was developed with the support of a chemical study and input from a nutrition specialist, ensuring that the supplement meets market demands as well as the tastes and preferences of the children. The thesis showcases a Net Present Value (NPV) of 2´736,180.29 and an Internal Rate of Return (IRR) of 80.01%, demonstrating that it is a viable and sustainable proposal to address the issue of malnutrition in children aged one to six years.
