El sabor del hogar. Migración y reconstrucción del hogar desde lo alimentario y lo culinario. El caso de migrantes quebequenses radicados en Lima, Perú

Abstract
Esta investigación proporciona una visión detallada de la complejidad de las
experiencias migratorias de un grupo de migrantes quebequenses radicados en
Lima, centrándose en la reconstrucción de su sentido del hogar a través de sus
prácticas alimentarias y culinarias. Con este fin, se llevó a cabo un trabajo de
campo entre abril y mayo del 2023 en la ciudad de Lima, Perú, con cuatro
migrantes quebequenses. Las tres técnicas de recojo de información
implementadas fueron la observación participante, las conversaciones informales
y foodmaps de las rutas entre sus casas y sus principales lugares de compra y
consumo de alimentos, de sus cocinas en Quebec y en Lima, así como de sus
platos peruanos y quebequenses favoritos. A partir de ello, se reflexionó sobre sus
prácticas cotidianas, alimentarias y culinarias reinventadas en sus nuevos ámbitos
de residencia. Además, sobre la construcción de sus hogares como espacios
multisensoriales mediante la preparación y el consumo de alimentos.
Lo hallado fue que dicho grupo de migrantes parece tener acceso a mayores
recursos socioeconómicos para mantener su autenticidad culinaria y reconstruir
su sentido del hogar por medio del cocinar y comer en Lima. Cocinar y consumir
alimentos de su país de origen les brinda una conexión tangible con su cultura y
les permite revivir experiencias sensoriales y emocionales relacionadas con su
hogar pasado, presente y futuro. Además, estas prácticas culinarias se convierten
en un símbolo de sus identidades transformadas. Por último, el cocinar y comer
alimentos del país de origen parece facilitar su integración social y comunitaria en
la sociedad peruana, lo que contribuye a despertar su sentido de pertenencia y a
reconstituir su sentimiento de estar "en casa". Esta investigación resalta la
importancia de abordar la migración desde una perspectiva multisensorial y
destaca la capacidad de los individuos para negociar y construir hogares
significativos en contextos culturalmente diversos a través de las prácticas
alimentarias y culinarias
This research provides a detailed insight into the complexity of the migratory experiences of a group of Quebecois migrants residing in Lima, focusing on the reconstruction of their sense of home through their food and culinary practices. To achieve this, fieldwork was conducted between April and May 2023 in the city of Lima, Peru, with four Quebecois migrants. The three information collection techniques implemented were participant observation, informal conversations, and food maps of the routes between their homes and their main places of food purchase and consumption, their kitchens in Quebec and Lima, as well as their favorite Peruvian and Quebecois dishes. From this, reflections were made on their everyday, food, and culinary practices reinvented in their new residential environments. Additionally, insights were gained into the construction of their homes as multisensory spaces through the preparation and consumption of food. The findings indicate that this group of migrants seems to have access to greater socio-economic resources to maintain their culinary authenticity and reconstruct their sense of home through cooking and eating in Lima. Cooking and consuming food from their home country provide them with a tangible connection to their culture and allow them to relive sensory and emotional experiences related to their past, present, and future homes. Furthermore, these culinary practices become symbols of their transformed identities. Finally, cooking and eating food from their home country appear to facilitate their social and community integration into Peruvian society, contributing to the awakening of their sense of belonging and the reconstruction of their feeling of being "at home." This research highlights the importance of approaching migration from a multisensory perspective and underscores individuals' ability to negotiate and build meaningful homes in culturally diverse contexts through food and culinary practices.
