Cultura alimentaria y globalización en Pisac : una etnografía comparativa
Abstract
Cusco es uno de los espacios más agrodiversos y uno de los destinos turísticos
culinarios más importantes a nivel mundial. En contraste, las tasas de desnutrición
crónica infantil, superan ampliamente el promedio nacional, mientras que la
desaparición de cultivos nativos y el desplazo de la agricultura de autoconsumo nos
muestran la otra cara del boom gastronómico y turístico en el Perú. Esta investigación
tiene como objetivo central analizar cómo se configura actualmente la cultura
alimentaria de Pisac Pueblo y la Comunidad Campesina de Paru Paru en un contexto
de globalización. La investigación parte desde una perspectiva antropológica en la que
la alimentación es analizada como un “hecho”, lo que nos permite descubrir el
entramado sociocultural que hay detrás de un plato de comida. En este sentido, esta
tesis toma como punto de partida una comparación etnográfica de la dieta y la cocina
del espacio urbano y rural del distrito de Pisac, para después explorar tres factores
explicativos que le dan sentido a la alimentación actual de estos espacios: Primero, los
cambios en la producción de alimentos, específicamente en cuanto a la agricultura en
comunidad, la tercerización agrícola y el cambio climático; segundo, el turismo, con los
cambios que ha generado en las actividades económicas y sus influencias sobre la
población; y finalmente, las narrativas alrededor de la comida, que dan cuenta de los
discursos y formas de oralidad locales sobre la alimentación actual en Pisac.
